Carrots!! I love them. Carrot halwa is something I always love to eat with vanila ice cream. I made carrot halwa with loads of ghee, powdered nuts and milk so that, it is really good for little Jebu. Let us see how to make that easily.
Ingredients:
- Finely grated carrots- 3 medium, 250 gms approx
- Condensed milk- 1/2 can
- Sugar- 6 tsp
- Ghee- 2 tbsp
- Crushed cashews- 10 numbers.
- Raisins-10
- Milk- 1/2 cup
- Cardamom- 4 numbers, powdered.
Method:
- In a non stick pan, boil milk and carrots together on medium flame. Even though the carrots get cooked in milk, do not stop boiling. Continue until all the milk dry up.
- Add the crushed nuts and raisins.
- Add the sugar, followed by ghee. Continue on flame until the sugar start to caramelise and ghee seperates. Then add condense milk.
- Keep on stirring until the condense milk thickens and coats over the halwa.
- Switch off the flame when the ghee seperates again.
- Sprinkle powdered cardamom or any other essence of your choice.
- Transfer to a tray greased with ghee.
- If desired, make into shapes on cooling. Serve.
